Microsoft has intentionally omitted delivery options from Office for Mac 2011.

PS: It is my understanding that you may be able to get Office for Mac 2011 to request delivery receipts but it involves creating a POP account in Entourage, modifying the header options in the profile and importing the profile into Office for Mac 2011.
